Berry Spinach Blend

Spinach is an excellent source of vitamin K, vitamin A (in the form of carotenoids), manganese, folate, magnesium, iron, copper, vitamin B2, vitamin B6, vitamin E, calcium, potassium, and vitamin C. It is a very good source of dietary fiber, phosphorus, vitamin B1, zinc, protein, and choline.

Strawberries, blueberries, blackberries and raspberries are powerful superfoods. They’re rich in nutrients, antioxidants and phytochemicals which may help prevent (and, in some cases, reverse) the effects of aging, cardiovascular disease, arthritis, diabetes, high blood pressure and certain types of cancer.

This blend can be used as a quick on the go breakfast or a mid-morning or late afternoon pick-me-up!  It will help to power you though to your next meal.

Berry Spinach Blend

Yields: 2 Servings

Ingredients

  • 4 or more cups fresh organic Spinach
  • 1 Cup pure Coconut water (no added sugar)
  • 1 Cup of mixed frozen organic berries (or berries of your choosing)

Method

  1. In a blender, liquefy the spinach and coconut water. Add the berries to the mix and blend until smooth.

FYI

You can add a splash of tart cherry juice or Pomegranate juice for extra sweetness, but if you find this to be too much sugar, this blend is great without the added sugar. Pre-washed spinach and berries help to cut down the time to just couple minutes. You can also use fresh berries if you prefer. If you do, just add a few ice cubes for consistency.
