Whole Wheat Pasta and Lentils

This dish is very quick, easy, simple and filling.  I try to keep Homemade Slow Cooker Lentil Soup on hand frozen in individual serving size containers.  On a night when I just don’t want to put much effort into prepping and preparing a meal, I put up some water to boil and pull out a frozen container of lentil soup.  Within the time it takes the pasta to cook, I have dinner.

Eat This With That

I like to serve this dish with a side of Broccoli rabe or even steamed broccoli.  Also, a big side salad is a great addition.  Italian Style Cauliflower is also a great dish that pairs well with this dish.

Lentils with Spiral Pasta (1 of 1)

Whole Wheat Pasta and Lentils

Prep Time: 5 mins
Cook Time: 10 mins
Yields: 6-8 Servings

Ingredients

  • 1 pound organic whole wheat pasta
  • 2 cups of slow cooker lentil soup (see link above)

Method

  1. Cook pasta according to package directions. Drain and add in the lentil soup. Ladle out, into soup bowls, 1 1/2 cups of the mixture. Top with fresh basil and parmesan cheese. You can add hot pepper flakes if you like it spicy. I also add a drizzle of good quality EVOO for an added layer of flavor.

Additional Info

I have, when in a pinch, used canned low sodium Progresso lentil soup. I prefer homemade but it's still delicious.
