Beautiful, colorful, flavorful, nutritious salads!
The fact that I live in Florida, means I can grow a garden this time of year. Here I started with homegrown green onions and a bed of homegrown greens (kale, romaine, Swiss chard, spinach, arugula, loose-leaf). I added a serving of leftover roasted vegetables: eggplant, red peppers, red onions, mushrooms, asparagus, and carrots. I then added roasted beets, tomatoes, avocado, cucumber, raw goat cheese, and for my protein I added Paprika coated chicken tenders. I sometimes use chickpeas, sardines, salmon, or anchovies as my added fat and protein. I used a few drizzles of a very easy to make vinaigrette dressing loaded with fresh herbs and spices that have their own health benefits.. Yum!
If you are eating drab iceberg lettuce with loads of store bought sugar laden dressing you might as well be eating a restaurant burger and fries. There is no nutritional value in those “salads.” Do yourself a favor and try this nutritionally dense salad and you will be more than satisfied. Pick your favorite veggies to roast and your favorite add-ins. I sometimes use artichokes, black olives, hearts of palm, and sometimes switch up the cheese for feta, or blue cheese. I also, make a paleo mayo, instead of a vinaigrette. It is so good and so good for you! Check out my website for more salad and dressing ideas.
